Tomorrow is market day and fresh fish from all the provinces in our island will be sold at the market. It will be a great way to try this recipe with a variety of different large fishes from the market. It is always great to know the fisherfolks who can reserve some of their catch until we arrive at the market. The great thing about this is that it is not that different from the usual way we prepare fish with stuffed cavity, the difference would be the stuffing: our usual stuffing would consist of sliced tomatoes, onion/shallots and garlic, with the optional chilis.
