Incredible recipe for Spanish croissants “Pan de Manteca”! An easy way to make croissants
Croissants Pan de Manteca Spanish pastries.
RECIPE Croissants Pan de Manteca Spanish pastries.
200 ml warm milk.
300 ml warm water.
100g sugar.
3 tablespoons of flour from the total amount (840 g).
Mix everything well.
10 g dry yeast.
Mix everything until the yeast has dissolved.
3 tablespoons of flour from the total amount (840 g).
15g salt.
Mix everything together.
Sift some of the remaining flour.
Knead the dough with a spatula.
Add flour in parts.
Sift the remaining flour onto the table.
Place the dough on the table.
Knead the dough with your hands.
Add 1/2 part softened butter.
Knead the dough with your hands.
In total you need 100 g of butter.
Add the remaining butter.
Continue kneading the dough.
The dough is very soft.
A total of 840 g of flour was required.
Form the dough into a ball.
Grease a bowl with butter.
Place the dough in a bowl.
Cover the dough with cling film.
Let the dough rise in a warm place for 1-1.5 hours.
For the filling:
200 g soft butter.
80g flour.
Mix everything well.
Butter and flour help preserve the layers of dough.
The dough turned out well.
Sprinkle the table with flour.
Place the dough on the table.
Knead the dough with your hands.
Divide the dough into 8 parts.
Form each piece of dough into a ball.
Cover the dough with a kitchen towel.
Roll out the dough ball with a rolling pin.
Spread the dough with a mixture of flour and butter.
Roll the dough into a roll.
Do the same with the remaining dough.
Place the rolls of dough on the table.
Cover the dough rolls with cling film.
Leave the dough on the work surface for 20 minutes.
Sprinkle the table with flour.
Roll out the dough with a rolling pin.
Repeat after me.
Roll the dough into a roll.
Form the dough into a tight roll.
Do the same with the remaining dough.
Place the croissants on a baking tray lined with baking paper.
Make slits in the dough.
Cover the croissants with cling film.
Let the croissants stand in a warm place for 30-40 minutes.
Before baking, close the edges of the dough with a wooden skewer.
Bake croissants in an oven preheated to 190 °C for 25 minutes.

Infatti troppa pasta arrotolata insieme quando li cuoci restano crudi al centro si vede bene anche dal video c'è ne venivano come minimo 12 con pasta più fine!
