'Cornstarch' in the US is the same thing as 'cornflour' in the UK Also, A good substitution for custard powder is instant vanilla pudding mix. Use the same amount of pudding mix as the original custard powder amount. OR You can use a combination of basic kitchen staples like cornstarch, vanilla extract and salt in it's place.

We made this yesterday and it's wonderful! Our only difference was not having the custard powder. We had wondered what it is used for, since it's basically corn flour with vanilla. I have watched this twice more and am editing out part of my comment because it didn't make sense. The corn flour stuck to the bowl so bad, we are going to try it again to see if I did something wrong. But looking at Jeremy's chicken right before it goes into the oil, it looks similar to mine, just not PASTED together. I have a new question that I hope someone from SOW will see.. Will twice frying the chicken make it more crisp? I've seen that on other channels, but not sure I've seen it here. I didn't want to dry it out last time, so it wasn't as crisp or dark as what Jeremy has after frying. ALSO! I am so glad he talked about reusing the oil. I've always strained the oil through a coffee filter to reuse it and my husband thought it was gross. If you are just deep frying chicken, why not use it again? I don't mean to use it until it's dark as motor oil, but using it a couple of times saves money and oil from going into the garbage.

Great recipe, but just need to add something about corn starch vs corn flour. Although they're both made from corn, corn flour usually is made with the whole kernel and is quite coarse when compared with wheat flour, while cornstarch is made only from the starchy part of the kernel, rich in carbohydrates but very low in other nutrients. It's also thinner and powder like. Corn flower have similar uses to other flours, and cornstarch is usually used as a thickener or in pastries. Maybe different names are used worldwide.
