Holy crap imagine going in that far, and then hearing a monster crunching on something . I would instantly feel my heart drop and want to get out of there as soon as possible. I can only imagine myself turning back and "speed-walking" , turning my shoulder back every 4 seconds. I can imagine myself turning around and seeing the metal wall fall and see the eyes of the creature stare at me. Running, being your only option, you have nothing else to do, I can already feel the anxiety and the insane amount of panic of being in a one way hall with a monster loose.

The only way to map would be to have people on foot drawing a layout. You'd have to try and recover the map if the person didn't make it back. Then have another pick up where they didn't finish if the maze opened up to the same path after a cycle or just start another map in that section hopping you'll have some overlapping occur in the drawing.
