Love scrambled. Have you ever tried bringing down the heat a bit and just breaking them straight into the pan. For most of my life I was mixing seperately before adding them to the pan. Watched a ramsay video where he just added them straight to the pan. I tried it and not only was it easier but it tasted even better.

First off, I take the eggs out of the fridge so they can get to room temp. Second, I get the pan to 360 degrees before I put a little avocado oil and some butter in a pan, then I put the well beaten, salted eggs into the pan and I constantly stir lifting the eggs off the burner back and forth until they are cooked to my preference. I usually make French omelettes. I typically use either a carbon steel pan (SolidTeknics is my brand of choice), or I might use stainless steel.

There's a few different methods like Gordon Ramsay, Thomas Keller and Heston Blumenthal. I've not tried Heston Bluemthal, but it's an interesting, although very time consuming method.

I do mine totally different. I blend in a tablespoon or creme fraiche with an immersion blender. Then cook low and slow under medium low heat. I finish with a couple teaspoons of cultured butter.

I would say about a week or so in a butter dish on the counter. You don't have to store real butter in the fridge. Real butter form the store is pasteurized and in the end is mostly fat and that makes it "safer to bacteria". You will tell when it has gone bad.

Butter is made from cream. That comes from cow's milk and is skimmed off the top of it. The cream is aerated and the process continues until the air is for out leaving a former liquid in a mostly solid state. The room temperature butter is a good idea and I do that myself. I find it perfectly fine to leave a stick of salted butter outside the refrigerator for 2 days but I wouldn't try it with unsalted otherwise known as sweet butter.

I prefer scrambled eggs cooked in bacon grease (I save it), I also add half and half and black pepper. The bacon grease is already salty and the half and half make them fluffy 😊

No milk for me. I do not see the benefit, I always felt it kind of diluted the egg flavor. My Mom always used milk.
