The combo that Miguel got was in one of the Ip Man Movies. And the slapping is an actual fighting technique that dosen't put a lot of stress on your hand, its called Paak Sau aka Slapping Hand.

A wing chun teacher analyzed the Miguel beat down, named all the moves and said alternating punches and slap was very efficient as it’s apparently very easy to break your fist quite easily giving punches so chops and slaps are the way to go to preserve them hands. Gojo obviously didn’t need to, I guess he just wanted to smack Miguel around. (Btw you can also find side by side videos of that part of the fight where Gojo’s using wing chun and a Ip man fight, it’s literally a tribute. Just like Jin-Woo from Solo leveling jumping up and down before his fight is a tribute to Akira Toriyama where Goku did it)
