Nice video, the one additional smashburger technique tyou should add is he lacy edge burger. It creates meat candy on the edges!

I was wondering if you could do a burger experiment to see if you like it like I did when I tried it. If you like it it may be a future vid you could do for content. Try making a semi-smash burger. I made a typical smash patty, got it real good and crusty on the flat top and then chopped it up and mixed it in with raw ground beef to make a pub style thick burger patty. It's sort of like eating the best of both worlds, you get a pub burger with the benefit of a medium rare patty but with more brown crispy flavor since you have the chopped up already cooked smash patty pieces on the inside. Make sure to let the smash patty crumbles cool before putting them in to avoid cooking the inside more.

Ron would be even happier to have processed the cow himself; something I have taken part in. My father and I wound up with 150 lbs. of very good, but lean burger (mixture of round, sirloin, and chuck). The best thing is, it only cost us $15, if I remember correctly.

HOLY COW! I've been wanting to try doing smash burgers, and here I am seeing all these wonderful ideas. Found one restaurant in Carson, Ca. that serves them, but the way my work scedule is during the week, if I'm in the area I just never seem to be able to find the time. Excellent video. I have been using my “Grill Grates” flipped over so the flat side is up. There are small holes in them but they don’t affect the meat. Great for steak searing too.

Good stuff! I've settled in on using 3oz balls of 80/20 ground chuck for my smash burgers... They cook up fast and its the perfect size for double cheeseburgers! I just keep it simple with some SPG, and American cheese (has to be the dark yellow per my son) on Martin's Potato rolls. I'm also working on cloning Five Guys Cajun Fry's...

I have all 3 ballistics smashers on love them even before I my blackstone. Just used a cast iron griddle on my grill. One thing I found when making smash burgers you get a lot of grease slapper but it's worth it

Greg, what size buns are you using!? I'm nabbing the 5mm and 8mm presses but wonder if your bun sizes are the 'Large' buns we usually have here in Texas (think, Whataburger) or if they are 'standard' burger buns? I usually use 4oz GB for the Large buns, and 2-3oz GB for the standard ones. I don't want to end up dwarfing standard buns with overhang (much) so some insight on your bun size/s would be helpful if you have a moment to respond. Are you still using 4oz GB with the 5mm? Always enjoy your content and really dig the new Ballistic Burger channel too!

Valuable information, Greg. Have you ever used an electric "commercial" countertop griddle? I was thinking of getting one; primarily for smash burgers. If you have a camping-type steel coffee cup, you could put it on the corner of the griddle periodically and keep your coffee hot. Cold coffee sucks.

What's the point of preheating the ball before smashing? I thought you wanted to smash right away to avoid pushing out juices.

@@hipx It's not to 'heat up the ball' it's to get the moisture up through the meat, so when you smash it quick on both sides it's less likely to dry out - less time for surface area against the heat that dries out a burger. Most smash burgers are not 4oz either.
