My Mom would do the wax twice. Second pour was done after the first layer had cooled. This way the second layer would fill in any gaps from when the first layer cooled and shrunk.

The first time I made jelly I used paraffin to seal the jars. Everyone thought I was crazy. I think my grannie told me about using paraffin to seal jelly. She was raised a farm girl back in the Victorian era, raised her children during the great depression, lived through WWII. She canned anything that could be canned. I know she still canned when I was a girl back in the 60's. I trusted her knowledge on using the paraffin!

When I was learning to can I n the 1970’s, lots of folks were still using paraffin. I did it myself for a while. We used to lay a small piece of string across the top of the hot wax so we could simply lift it off. But I had a lot of trouble with mold even though I sterilized my jars, so I started using Ball or Golden Harvest jars instead. But I still have a fondness for the old ways, thanks for sharing.

My mother made jelly the old fashioned way, made the juice from cooking whole grapes, grinding them thru the Folley food mill, which gave all the vitamins with skins ground thru it. It made a thick and healthier juice which she simmered all day to reduce it to an even thicker juice, added sugar in a lesser amount and simmered some more. She canned it using no pectin and it made a soft rich tasting jelly that was more spreadable. She used the wax and a huge family and friends never suffered any ill effects. Thank you Tessie or showing this wax method, good memories or me.

A bit of over kill on the sealing…. The cellophane is the lid . The wax paper is used instead of wax…. If you have the lid then that’s all you need… if you have wax that’s all you need… also too..a pice of cooking string is placed in the wax like a candle wick to be able to pull the wax off and on as a lid once the product is in use, saves you picking it out with a fork or knife… good going , good for you… always good to learn something new… understanding that paraffin is a byproduct of petroleum , food grade is always important to seek as impurities will leach into liquified solids over time… .. accidentally consumption of wax scraps is not dangerous or harmful but always use distraction and seek professional advice ..

Best grape jelly tutorial ever, Tessie! And it really did bring back some wonderful memories. My grandmother and mom both made great batches of jelly. I don't recall getting jelly from the grocery store until after we moved from a rural area to a more suburban neighborhood. Somehow it never tasted quite so good. My grandmother's red currant jelly is still the best I've ever tasted. You are a born teacher! I actually hadn't thought about the fact the some people might worry that the melted paraffin would mix in with the grape jelly. That's a very logical and reasonable concern and you dealt with it. I was so used to seeing the wax floating on the top of the jar of jelly when I was a kid that I didn't even consider how someone new to canning might wonder how that worked! Thanks again for dealing calmly and sensibly with canning safety concerns, Tessie. That's so important. Just a couple weeks ago I saw a KZbinr who had tried to can potatoes, garbanzo beans and some other unusual things (milk may have been one of them). Apparently she left the jars on the basement shelf for a relatively brief time (a few weeks, maybe?) and then decided to try to serve them to her family. She said that when she opened them the stink (from the potatoes and garbanzo beans especially) was so powerful that she couldn't get her family to eat them. (Thank goodness they refused.) She didn't seem to feel bad because she didn't think she had made any errors. She speculated that she might have had "the wrong kind" of potatoes and beans. She also had some apple butter that her family had refused and she mentioned that she could give that away as gifts. "After all, who doesn't love apple butter?" I almost started to raise my hand. I generally do love apple butter, but not the kind that can be used as paint remover. Like you, Tessie, I didn't know one farm wife, relative or neighbor who ever tried to can dairy products. Milk was usually delivered by the milkman from a local company, or was bought at the grocery store, or some families used powdered milk or had cows on their own farms, but as for buying milk (which is what some seemed to be suggesting) and then pouring it into jars, canning it and storing it on a shelf? No one I know has ever heard of that. But on a more cheerful note: I'm hoping that you, Chevy Man and the rest of the family enjoy every bit of that homemade grape jelly. I think there's a bagel out there with your name on it! 😀

Who on earth eats bad smelling food? And yes, some kinds of food make trouble at canning: starch, beans, all kinds of roots or pumpkin family fruits it not canned as salad with vinegar. Milk makes no sense to can, the last batch I bought yesterday has a shelf life until March, and canning milk is difficult.

@@kesmarn This happens when people mix systems. We have waterbath canning rules and recipes in Europe as well - and they never recommend canning rice, noodles or potatoes, for example. Which last long or have better ways to preserve them like drying for example. And preserving milk means since thousands of years making cheese.

I am in my 60’s and this takes me back. My mom always sealed her jams and jellies with wax, I had never heard of any other way, but then a friend was making jam and she put hers into a hotwater bath. I have done both over the years and like you I never saved the wax, silly us. I now reuse the wax, I wash it and save it for another jam making day or I make candles. The price of wax has gone way up so why throw away money. Thx for the video it brought back loving memories.

I learned to make jam's and jellies that way and it was just the accepted way of sealing these jars. We did always leave the jar covers and rings on the jars after the paraffin wax had set. Jams and jellies that job moldy were reheated and used. Milk products were bought locally or directly from the farmer, often delivered directly to your home so there was no need to can them.

The timing of this video was amazing. I bought a couple of these jars a few weeks at the Thrift store for $1 each because they said Ball on the jar. The tops were taped down on the jar (I assumed so they did not get seperated). When I got home and washed them up I found the tops did not screw on to the jar- it just sort of sits on top. I thought this is stupid, what can I store in this?. Now I know. Thanks for sharing your knowledge.
