Hi Tessie! I remember my landlord’s wife left us a couple jars of homemade grape jelly when I was at college. She reused shrimp cocktail jars. She sealed them with wax & had a little piece of cord in the wax so we could open them. Seeing you make these brings back that wonderful memory for me. Blessings always dear one!

I have been using powdered pectin that I've been buying in bulk. The only jelly/jam recipe that powdered pectin won't work in is Pepper Jelly. Buying in bulk saves a lot of money for me. The color of that jelly is beautiful. You can also pop that wax out and wash the back and reuse them. That's what my mother did.

I canned about 60 jars of pepper jelly this summer, and I used powdered pectin for a few batches. As long as the powdered pectin is cooked in at the right time and the sugar is added last, it’ll do right. I think it’s easier with liquid pectin, though.

I haven't seen jelly canned that way in years. We had a huge Concord grape vine in our back yard. My husband's cousins did it that way every year for the whole family. They used small glasses would fill them and then covered them with the wax.i was amazed you can do it that way because my family always used canning jars. That was more than fifty years ago.🧓

I collect those little jars with those pretty lids, too! I remember when I was a little girl, people would use Gulf wax to seal their jellies and jams. They would save the wax once they opened the jar, wash it, and melt it down next time they made jelly or jam.

You brought up some great memories! My grandmothers always used paraffin to seal jelly jars. My mom switched to using lids and rings so, while I helped her with lots of canning, I never did this myself but I remember eating grandma's jelly. What a treat!! I also thought about the foam while the jelly was boiling. We didn't add butter to knock it down but used a spoon to skim it off and put it in a cup or small bottle. In my house that was called the "scum pot" and it was our sample of how the jelly turned out. It was eaten immediately or if there was lots, kept in the fridge for a few days. I also had to come mind a video I saw on another channel in the last few weeks (sorry, I don't remember which one) where they were making blackberry jam and instead of commercial pectin, adding a grated apple. Apples are full of natural pectin. I thought that would be a great survival type method.

This is so nice! That's how it was done when I was young. I do have one suggestion. Please tell your subscribers that it is vital that when they melt the paraffin to do it in a double boiler arrangement because if it gets too hot, it can explode. I knew someone that happened to and she got badly burned. Your jelly looks SO good and would make sweet gifts.

Your jelly is beautiful Tessie! My grandmother used to seal jelly with wax just like this. My daddy, when he was living, would tell stories of he and his brothers sneaking into the smokehouse (cold storage) and stealing Grandma’s jam by removing the wax, eating some of the jelly, then putting back the wax so she wouldn’t notice! Precious memories❤️. Those jars are amazing too- May I ask where you found them?

I used to chew that wax like gum. It was good when it a bit of jelly on it, then got kind of boring when the jelly was gone LOL

My mom always used paraffin for her jelly. I remember spreading the jelly on toast and ending up with little bits of wax mixed in...lol.
