Hi everyone! Today I'll be sharing with you an easy way to make Kaya Jam. Rather than stirring, we'll be steaming it instead! This is an easy recipe that will only take 30 minutes to prepare and tastes exactly like it would if you were to stir the Kaya (although, if you prefer the full Kaya jam recipe, the link to that video is here: • Kaya~Coconut Jam )! I hope you’ll give this thick, silky and smooth Kaya recipe a go!

Ingredients
3 Duck Eggs (About 250 grams)
150 to 180 grams Cane Sugar
250 ml/grams Coconut Milk
2 Pandan Leaf, cut into smaller segments
Caramelized Sugar, 50 to 80 grams Cane Sugar
Note: Orange yolks will result in a darker coloured kaya.

I miss kaya toast... since having an egg allergy. But I’ve never tried duck eggs. Maybe they are different from chicken eggs 🤔

I’m a big fan of kaya jam but can’t get pandan leaves where I live. I managed to get my hands on pandan extract though. Can this be used instead and how much should I add?

A couple of drops of Pandan extract should be enough. Good luck!

Instead of pounding the pandan leaves, can I soak it with the egg and coconut milk mixture and steam it all together?

Are you sure yours duck eggs? Why not chicken eggs? Little confused.

Traditional Kaya is made with duck eggs, ie richer & the egg white is thicker. You can use chicken eggs too.

Hi I love the recipe. I used to buy it from the shop as a kid living in town but I'm actually in OZ, and pandan leaves are hard to get. Can substitute with spices or ginger?

Half might be too much, perhaps reduce 1/4?

looks good but i will give it a miss, so much sugar plus coconut milk = so much calories!

Yes, the traditional recipe ratio was 1:1:1, more sugar! That's why I don't make them often.
