Old friends in Jamaica had live-in cooks who made the world's best saltfish and ackee breakfasts. No rice. Just fresh coconut oil, saltfish, loads of ackee freshly picked from their estate trees, salt, freshly ground black pepper, julienne red and green bell peppers, onion, garlic, and thick-sliced smoked bacon. Sadly, everyone who could cook fabulous old school Jamaican foods has passed away.
