Charlie, I've been watching your show since you had less than 100 followers. I've been cooking on boats in the Gulf of Mexico and your recipes are what the workers like. I just got a new job as head chef for a very large work camp up north. I love this recipe and intend to cook this for 160 petroleum workers when I get there next week. I just tried this technique with chicken thighs. They came out great. Pre-cooking them before the frying takes all the guess work out of whether they are fully cooked or not and they are very juicy. Thanks.

I no a lot of people that cook fired ribs including myself and we don't bake or boiled them first and they always comes out cheaper on the outside and tender on the inside .
