Yep, I would not consider this a traditional smash burger. The onions will release water and steam the burger instead of crisping it. I actually prefer the way Brad is doing it. Like he said. cook it like you want to do it.

Onion smash burgers are my favorite things to cook. I do it slightly differently and I put down my meat ball first, then cover it with thin onion and then press. I find that it’s one of those perfect things that doesn’t really even need sauce. Just a pickle and it’s perfect. Although that’s not a critique whatsoever. As someone who also enjoys a thick burger with sauces and toppings, these bad boys are simple and perfect. They’re actually perfect.

Brad, give a try to Coleman’s English mustard in your special sauce for a different bit of heat. I use either the dry or the prepared. It’s a pretty unique taste.

Thought you were channeling the Horshack character from Welcome Back, Kotter with the Ooo, ooos.... Bachan's is awesome. You asked for suggestions to cook on your grill, try cooking those ramps whole, on your grill, they don't need to be oiled, but maybe wipe an oiled up paper towel on grates just before dropping them on to wilt and char them to your liking, kinda like grilling asparagus. Make a BIG batch if you can, cause you'll love them, I promise ! PS Brad, I know you ferment a lot of stuff, do you homebrew ?
