Hi all! I'm a med student studying abroad, and I've been cooking for over 10 years now, so I'm pretty good now (bragging aside), did someone notice how the chef said something about making a paste / marination mix from all the spices, but when they added the ingredients, it turned out it was just kachree, red chilli powder and garam masala and definitely not ALL the spices on display were used. I was under the impression ginger/garlic paste's used but I guess I was wrong. Some clarification would be helpful.

You’re right and on the point. Many restaurants especially bundo khan will never disclose their secret recipe and business tactics. They mainly used a combination of 12 different spices grind separately, mixed and marinated for at least a day in refrigerator prior to BBQ.
