Advice from bottom of my heart: If you are gonna do this for long term, you gotta seriously start thinking hiring someone since the business is only gonna get better. You might be ok for now, but in the long run, it will take a toll on you. Believe me, brother. I've been in culinary business for some time now, and I know how hard it is. The workload you have to deal with night in night out, I just can't imagine how tough it is. I mean...we never met before personally, but I see that you possess a beautiful soul.
