The scales are excellent, been using my 8" Chef knife version a year now and the ergos are magnificent !

Thanks, Dirk, for the demo/show of this petty knife. You did fine slicing the food ... but surprised the ground scallops did nor prevent 'sticky slices".

I own a couple of Japanese Shun knives, them things are sharp ✨, but it also depends on maintenance, you need to master how to sharpen and maintain these things.
