NOTE: Though I sterilized the jars, this step really isn't necessary - especially given the pH of the apple cider vinegar and since these are "fridge" peppers. It's more or less a habit that became second nature from years of beer brewing, wine making and pressure canning. It certainly doesn't hurt to do it, but probably overkill for this recipe.

I'd never heard of Cowboy Candy, but you've introduced me to My NEW Pickles!!!! I'll never buy pickles again. I made three 8 oz jars, two days ago & was wondering how I'd be able to wait a week, let alone 2 (as suggested). As luck would have it, one did not seal 😃 👏🏻 I'm pleased to share they are still FANTASTIC the day after! I'm so glad I got the mandolin!! I'm going to need bigger jars!!! I'm also wondering if "real" jelly could be made with allulose. I used to make all kinds of savory jellies, pre-keto. The issue now is that even if it worked, the cost would be kinda crazy. Jelly recipes typically called for 6-8 cups of sugar...

@@SeriousKeto I found an interesting KZbin video a while back ago that used chia seeds to thicken the jelly. Then you wouldn't have to add as much allulose... just enough to sweeten it. I love red pepper jelly and cream cheese. I've been thinking about trying the chia idea to make that.

I never knew there were cutting gloves until I started working in the bakery at work. I once cut a loaf of bread for garlic bread and cut myself pretty badly. So I went out and bought myself a set of those gloves. They are essential. Hey Steve, you and I have the same scale!!! Thought I recognized it. I agree that the Splenda Allulose is really good. The only kind I can find around here. When it goes on sale (and there is an Ibotta rebate), I stock up. I was just thinking about making refrigerator pickles with allulose Thanks for the brine idea.

Ohhhhh these sound DANGEROUS! My jalapeno plant has only produced a few little stubby peppers so far but may pick up once the intense heat (East Texas) eases off a bit, and/or we get a little rain. I really need to try this recipe! I too have learned the hard way thinking I am tough enough to cut up a few peppers without gloves. Not cool. Even after my dad told me stories about handling sensitive body parts while using the restroom after he thought he was safe. YIKES

I made these a couple weeks ago, no gloves, washed hands very well, and still burned my eyes later on when I rubbed them. The peppers were delicious, though. And...every time we eat something with Allulose our blood glucose drops; I've tested us dozens of times and it does it every time: love it!

In my canning groups I see people making cowboy candy all the time but I didn't know there was a keto version. We got jalapeno plants growing under our lights right now for summer. if you're into the idea canning your cowboy candy the USDA has said that stevia and sucralose can be used as they are heat stable although I know sucralose is a no no for some folks. I've heard anecdotally that Allulose can be used as well but it is not tested. I might consider canning with Allulose for myself but I would never use any other alternative sweeteners as many are not stable at canning temps and will go bitter.

Another great recipe, Steve. My husband is one of those hot pepper freaks who considers Jalapenos equal to Bell Peppers, so he may try this with Habaneros. I want to mention some controversy with the Splenda brand Allulose. Please note that Splenda claims it is a ONE TO ONE substitute for sugar, where other brands are only 60% as sweet. We have tried it against other brands and the Splenda one is considerably sweeter. Splenda will only state that the "natural flavors" listed in their ingredient statement is a "priority blend" of ingredients which increases the sweetness level to that of sugar. Most speculate that that they are adding stevia, but it could also be monkfruit or a blend. I would think that "natural flavorings" would rule out Sucrolose. Just something to keep in mind if you switch to another brand of Allulose.

I've been hearing about this Cowboy Candy for a couple of years but have never tasted it... this year I grew jalapenos so I could finally make it and being keto I subbed allulose which for three pounds of peppers pretty much broke the bank (the original recipe used 6 cups of white sugar!!!! canned in quarter pint jars they're the most precious thing I've made but HOLY MOLY I just tasted the brine by touching the tip of my finger to my tongue and I was on FIRE!!!! I'll be waiting a month before popping open a jar but it's gonna be scary LOL...

Confirmed on the gloves. I like to mince and dehydrate hatch green chilis (and serranos, etc.) to grind on my meats to sous vide. I've made the mistake of thinking I could go without the gloves. One finds out after a bathroom trip or two that the capsaicin does not wash off easily, before or after the visit.

No, it just softens them slightly. I think if I were trying to cut the heat, I’d slosh the slices around in a bowl of water to try to get some of the seeds out.

@@SeriousKeto Yeah, I noticed you didn't remove seeds. It's such a PITA I generally don't bother, but some people make a big deal about the seeds.

Great stuff, Steve!! This recipe could probably be used to make bread & butter pickles or pickle relish, right? It's so hard to find sugar-free pickle relish, but tuna and many other salads just aren't right without it.

Yes, but it would be "fridge" pickles or relish, since I'm not pressure canning with this recipe.
