Try this marinade for boneless skinless thighs or breasts (thighs are best in my opinion). Put 1 can chipotle chilles in adobo sauce, about 1/4 cup olive oil, and some course ground sea salt in a blender. Blend until it is a paste consistency. Pour it over chicken in a ziplock bag. Mix it up and put in the fridge over night. Grill outdoors on a high heat grill for about 6 or 7 minutes per side. After it cools enough to handle, chop it up and eat with rice. Tastes just like Chipotle. Caution: you can grill it indoors but the peppers can cause some people to cough and have eye irritation as it cooks.

I'm blessed to live in an area with a local meat market. Everything is raised on small scale local farms, so I know there is no salt water injections, everything is fresh, and it's cheap as hell. For reference, my last trip I bought 5lbs of chicken leg quarters (leg and thigh), 4lbs of boneless, skinless chicken breast, 2 ribeye steaks, a whole chicken, 4lbs of pork chops, 1lb of lean ground beef, and some odds and ends of produce for $50 Canadian ($37ish USD)
