NOPE there always needs to be a section you have to hand sew an opening closed. Otherwise you won’t be able to turn the vest

there has to be an easier way to finish the entire Vest by machine... including shoulder seams

Nope there is not an easier way per se… You always need to have an opening to flip the vest. Can leave an opening on the side seam , but you still need to close that seam by hand. The shoulder closure is a smooth way.
