Ingredients:
雞1700克(From Costco)
生抽350 ml
水 650 ml
老抽 55 ml
玫瑰露酒70 ml
冰糖 100 克
薑一大塊切片
八角 2個
花椒粒 2 茶匙
丁香 4-5 粒
鷄洗淨,瀝乾水份。大鍋清水,以浸過鷄身為準,水滾將鷄放入,半分鐘提起。放入、提起動作共三次,出水用放進準備好的冰水充分涼透。
豉油汁做法: 所有汁料放大㷛煮滾 (切記一定看火,豉油汁很容易暴滾!)滾後轉慢火煮五分鐘、待香料出味。(小心滚瀉!可不上㷛蓋,以防滾瀉)。汁要試味,如太鹹可加水,但不應太淡、鷄會不夠味。
鷄做法: 出過水的光鷄放入煮滾豉油汁,鷄胸向下,上蓋大火煮致汁再起小氣泡 (千萬不要大滾,鷄肉會老不好吃)。轉"最慢火"煮二十分鐘、將鷄翻轉 (胸向上)繼續慢火煮十五分鐘、關火再浸二十分鐘,取出放涼斬件、淋上豉油汁即成。
豉油可放密封器皿,放冰櫃日後再用數次。不要放太滿,以防結冰是爆破器皿。再用時加糖、鹽、香料 、生抽等補味。
Chicken 1700g (From Costco)
Light soy sauce 350 ml
water 650 ml
Dark soy sauce 55 ml
Rose wine 70 ml
100 g rock sugar
A large slice of ginger
2 star anise
2 tsp peppercorns
4-5 cloves
Wash the chicken and drain it. A large pot of water is enough to cover the chicken body. Bring the water to a boil, put the chicken in, and lift it up for half a minute. Put it in and lift it up three times in total, and then put in the prepared ice water to cool it thoroughly.
How to make soy sauce: Bring all the sauce ingredients to a boil (remember to watch the fire, the soy sauce can easily boil!) After boiling, reduce to low heat and simmer for five minutes until the spices are fragrant. (Be careful of rolling diarrhea! Do not put the lid on to prevent rolling diarrhea). Test the taste of the sauce. If it is too salty, add water, but it should not be too bland or the chicken will not be flavorful enough.
How to cook the chicken: Put the chicken that has been drained of water into the boiling soy sauce sauce, with the chicken breast side down, and cook it over high heat until the juice starts to bubble again (do not boil it too much, as the chicken will become stale and unpalatable). Turn to "lowest heat" and simmer for 20 minutes. Turn the chicken over (breast side up) and continue to simmer for 15 minutes. Turn off the heat and soak for another 20 minutes. Remove, let cool, cut into pieces, and pour on soy sauce. Serve.
Soy sauce can be placed in a sealed container and placed in the freezer for reuse several times in the future. Don't overfill it to prevent freezing and bursting the vessel. When using again, add sugar, salt, spices, light soy sauce, etc. to supplement the flavor.
