താറാവ് റോസ്റ്റ് | Duck Roast - Kerala style recipe | Tharavu Roast

Kerala style duck roast is a traditional and popular dish in the South Indian state of Kerala. It is a delicacy that is often served during special occasions and festivals. The duck is cooked in a mix of spices including turmeric, coriander, and red chilli powder along with other ingredients. The dish is usually garnished with fresh curry leaves and served hot with rice or Indian bread like chappathi or paratha. 🧺 INGREDIENTS
Duck (താറാവ്) - 1 kg (after cleaning)
Turmeric Powder (മഞ്ഞള്‍പൊടി) - ¼ + ¼ Teaspoon
Coriander Powder (മല്ലിപ്പൊടി) - 1+2 Tablespoons
Chilli Powder (മുളകുപൊടി) - ½ Tablespoon
Black Pepper Powder (കുരുമുളകുപൊടി) - 1½ + 1 Teaspoon
Garam Masala - 1 + ½ Teaspoon
Salt (ഉപ്പ്) - 1+1 Teaspoon
Water (വെള്ളം) - ½ Cup (125 ml)
Lime / Lemon Juice (നാരങ്ങാനീര്) - ½ Tablespoon
Coconut Oil (വെളിച്ചെണ്ണ) - 3 Tablespoons
Shallots (ചെറിയ ഉള്ളി) - 35 Nos (Sliced)
Onion (സവോള) - 2 Nos (250 gm) - Sliced
Ginger (ഇഞ്ചി) - 2 Inch Piece (Crushed)
Garlic (വെളുത്തുള്ളി) - 10 Cloves (Crushed)
Green Chilli (പച്ചമുളക്) - 3 Nos (Chopped)
Curry Leaves (കറിവേപ്പില) - 4 Sprigs
Tomato (തക്കാളി) - 1 No (Chopped)
