I use to advise folks to practice on cheap knives. What I didn't realize is that I was doing them a disservice. It was frustrating them because of the soft junk. At least put them on 8cr or a good heat treatment. Thanks for sharing!

yeah i think the best way to point them is like 8cr, 10cr, 14c28n, nitro v, 9cr etc as they are usually decently heat treated and are fast sharpened steels

That Tri stone is the real deal. I bought mine when you did a review of it. I use it primarily for my kitchen knives, a quick hit on the 1200 grit gets them back up fast. I spent some time on it with my Civivi Altus Nitro V steel and i will admit i am proud of the edge. Im still learning how to freehand and that Tri stone has been great. Thanks for the video brother.

You are going to like it I'm sure. I bought it when he did a review on it and like you I am new to free hand sharpening. I like that it sets up higher than a regular flat stone too. For me it just seems to work well while keeping the angle correct. It is a whole lot of sharpening for very little money.

Great Vid Here Jerad! I have several of the Venev stones and enjoy them. Sadly, the selection isn't good now. They come out of Russia and with all the issues surrounding that, no one can get a steady supply of them. Grit O Matic is the official dealer here and the inventory is really sparse. I found another source for the Venev's some time ago which was almost half the price direct from Bellerose. But due to sanctions, that too has dried up. GRRRRR!!! If you are lucky enough to be able to obtain one of a few of these fine stones, the company cautions against sharpening very low carbide and or soft steels. Many steels, especially low carbide stainless steels are very soft and are sicky on the stone. This actually causes much more wear on the stones. Much higher wear than ever high vanadium steels. This is due to the gummy/sticky nature of high chromium content and low hardness. It rather than wearing the stones surface from the friction of honing, it pulls at the diamond matrix much like a pencil eraser does on paper, where a smooth piece of hardwood just glides over the paper. Fo for practice on really low quality steels, use your everyday Alu. Oxide or Silicon Carbide stones and save the fine Venev's for quality steels. They excel at sharpening high hardness and especially high vanadium carbide steels. There are alternatives from Japan, but are even more expensive. There are also Chinese copies of the Japanese stones and are very cheap. The small pocket versions are quite good but very small. They have larger full size bench stones, however some have shown they are much lower in actual Diamond content. I no longer use water for lube on the stones as it still allows loading which requires surfacing to clean up. I switched to Trend Diamond honing fluid. There is no build up what so ever in any of the Veneve stones, and the only time they need dressing is when the surface becomes overly slick and cutting action is diminished. I ran a test for its usefulness and gave the results to Grit O Matic and is published there. Other options are Hapstone and Columbia George. Both very high quality products. Also BBB Big Brown Bear, when available and quite expensive. KnifeMaker

The production example from Wüsthif is a bit misleading. I haven't seen a bad grind on a Wüsthof. Heattreating might not be the best, but in a well setup automation it can be very consistent over all knives.

What do you spray on the stone? Is it just soapy water? Should I spray some on my guided field sharpener?

yes its soapy water but no you dont need to on your regular diamond plates you can it might make them last a little longer but its not required like the resin bonded ones, however you should use it on your ceramic stone for sure

It’s definitely more than the diamonds that make those plates expensive. Imagine if the resin was too soft and the steel plate was warped

The thing is, that you can't really do much to shit steels, no matter how expensive and good your equipment is. The shittest steel I had to sharpen as a favor, was so soft, that 400 grit diamond stone was leaving visible micro chips on the edge after just 1-2 passes, and even after 1200 grit diamond, it was more sawblade, than a knife. You don't have to have kitchen knives that cost hundreds of dollars, but the difference between dirt cheap budget kitchen knife, and a $20-50 Victorynox or another quality brand, is just huge.

Yeah when it's not mentioned, especially cheap knives, you're getting some bargain bin stainless that can be heat treated to a very basic degree. Probably in the low 50's hrc. I also agree about some cheap steels being really hard to sharpen. I have two super cheap Chinese pocket knives (one is an benchmade infidel "clone") and the other is some random cheap folder and I swear they both have blades as hard as glass. They are very hard and take a lot of effort to sharpen but at the same time, not matter what I do, i can't get an edge on them. I can't get a burr and no matter how fine of an edge I bring them to, they just don't cut. The edge stays super smooth and you couldn't even cut your finger on it if you tried... Weird. I'm guessing it's a combo of using some cheap steels, maybe random mixed batches with improper or too hot heat treat? Maybe someone that knows more could explain better.

Idk what’s worse. Is it the waste of time sharpening a knife that will dull in the first use? Or that unstable table? It’s literally creaking like 50 year old wooden floors😂 I don’t got money like that but Jerad…I’ll buy you a table.

Up to $35 already now for the diamond tristone. Lame. Still a good buy for how big the plates are. Temu has cheaper large plates, and they’re decent for the price I use them for axes and machetes, but they’re not quite that big. Also just an FYI for people, don’t buy their copy of the Worksharp Field Sharpeners. They have thin cheap abrasives stones glued on, *not* the diamond abrasives the genuine model has, and they’re only about $10 cheaper than the Workshop anyway. 👎

@jdisdetermined no I haven't but I know BBB stands by them they are very expensive, they are very similar in ways to the resin bonded diamond stones they just don't load as much, but regular diamond plates cut and work the same they just wear out fast while those other ones last almost forever
