As someone who works at SBUX, the reason the shaken esp is layered like that is because what is shaken together are the shots, ice, and syrup. that is the poured out into the cup and the milk is splashed on top so the shots can theoretically flow through the milk as you sip on it, making it less bitter XD. sorry anytime I get to nerd out about coffee I take the time to do so lol. happy holidays shaun !
