Eddie I don't know if you're a fellow Eurasian or a bloody good chef but I can attest that this is one great recipe! I make mine exactly like yours except with a slightly reduced amount of yolks + crushed almond slices + dash of rum. Yummers!!! Saudé brother! Am happily subscribed :)

Just tried this recipe and it turned out so good!! I love the texture and the crumb of the cake. Will definitely be making this again for hari raya! Since i halved the recipe and used a 7x7 baking pan, had to extend the baking time to about 1 hour+. I kept to the 45min at first since the stick test was clean but realised the cake was sinking in the middle after it cooled a bit so i put it back in the oven 😅 Nonetheless, all was good and it was still very delicious. Thank you so much for the recipe!

May I know how many egg did you put for 7" Square? At what tempreture did you bake for 1 hour? For 7" Square, you half the ingredients right? Tq

@ Tan Liu Hun, I have not bake in a 7 inch pan with this recipe before. Maybe you can try half the recipe like you said and baking temperature should be the same except shorten the time. Sorry you need to experiment yourself.

@@tanliuhun1418 Yup, i halved it so 7 yolks and half of the remaining egg whites by weight. Same temperature but definitely keep it in the oven for at least 1h. Since ovens can be different, you will need to check your cake after, just don't keep it for too long or the cake will be dry. I had to cover top of my cake with aluminium foil since it got brown fast. But cake came out really yummy, my grandma approved haha

Do not keep the sugee butter mixture in the fridge. Cover and leave it at room temperature for the the sugee to slowly absorb the butter.

Good morning Rani, thank you so much for your feedback 🙏😊 As for Orange Sugee cake, I've not try making one. I guess you can try adding orange zest but if you want to add juice then you probably have to reduce the eggs. Not sure what is the actual amount, sorry. Safest way is to just grate about 2 to 3 orange zest and add to the batter without affecting the cake texture much.

What you can do is roughly use 75% for all the ingredients. Or to make things easier, follow the recipe and pour the batter into your 9 inch pan. Whatever leftover batter you make make into cupcakes.

I've made this at least 5 times. Love it bery much! Just 1 question. How long can I actually leave the semolina butter soaking. Can i put it in the fridge for a half a day or even a full day before preparing it for baking? Thank you!

The problem with keeping in the fridge, the butter will hardened. Maybe after it has soaked for at least 4 hrs, then you can keep in the fridge but you need to thaw it until it becomes soft again. I've not tried leaving in it the fridge.

Eddie, I tried the recipe (halved the ingredients as the original cake was too large) and although it was good I need some advice. I notice that the texture of the semolina is rather pronounced (it's kinda crunchy). How do I make it "softer"?

If you prefer a finer texture, use almond flour instead of finely chopped almonds. Also you can let the Semolina soaked in the butter for a longer time so that it will absorb the moisture from the butter and becomes softer. Actually, this cake is suppose to be a bit crunchy.

I've not try baking in a 7 inch pan but maybe you can reduce the ingredients by about 30 % to bake in your 7 inch pan. Any extra can bake in paper cupcakes.

Actually, another recipe for Sugee cake says to add butter to the Sugee after frying to let the butter melt completely and mix it into the Sugee. I tried that recipe and the Sugee cake texture was ok. But I also want to try this recipe to see which I prefer. 😊

Normally it's due to the cake is under baked. Sounds like your actual internal oven temperature is incorrect. Try bake a little longer until the center portion is firm. You may need to cover the cake with baking paper if it turns dark too early.

Not sure about the actual temp and timing for an 8 inch pan. Just monitor closely during baking especially the first 15 mins. You may want to start with 165 instead of 175?

Almond powder is very fine ground almonds, so yes you can bake with it. But for this recipe, I'm not sure if you can get the same texture that is required for this cake.

Sugee cake originally has almond in it but as with all recipes you can modify to your liking. It is your wish but of course there will be people who will be upset if traditional recipes are not followed closely. I myself have modified traditional recipes and have incurred nasty comments. So basically it's up to you to change to your preference. As for how fine the almond should be, you can base on my video.

@@ShiokmanEddie Blessed Thursday morning Eddie. One more Q. After mixing the butter and semolina, you mentioned to rest it for 4 hours. If I half the recipe, do I still need to rest the mixture for 4 hours or 2 hours. (half the time) Please advise and Thank you.

Set aside 4 hrs for the Semolina to fully absorb the butter at room temperature covered.

Fyi, egg yolks contain lesser percentage of insulin level compared to egg whites. Don't believe the rumors of egg yolks is bad for health. It contains good cholesterol. Yes, there's bad and good cholesterol. :)

Yes preferably for the Semolina to fully absorb the moisture from the butter. Or else the texture will be gritty.

I'm not sure how big is kampong eggs but I used around 60g eggs for this recipe

Hard to tell. Could be over baked like you said or oven temp too hot. Also maybe need to soak the Semolina in butter longer. You can also use almond flour instead of finely chopped almonds. Maybe kampong eggs a bit small. Many factors can cause it.
