I underestimated how salty the rotisserie chicken would be so the pot pie ended up a bit on the salty side. Next time I would omit the teaspoon of salt. But I managed to save dinner with a tip at the end. Lesson learned, try the chicken first!

Flo Lum lol I was thinking as he said it was a bit salty, "why not add it on top of unsalted mashed potatoes or add diced boiled potatoes to the mix and then just add the pie crust back on top" great minds definitely think alike ☺️ thanks for sharing another great recipe. Be blessed

You are right, Costco chicken is super salty. I think that they are stored in brine, before they are cooked.

I make mine almost exactly like your recipe. I've never thought about using a Costco chicken! I will next time. Also, when I use the bouillon, I never add salt to any recipe. It usually has more than enough in it for any recipe. I also try to make my store bought pie crust fit on my oblong casserole dish! I'm definitely going to try the iron skillet next time! Perfect fit! I do add a little bit of diced potato, and some half and half to mine. You could also put it under the broiler for a couple of minutes at the end, to brown the crust. Thanks for this recipe and tips!

I made this today except I made my own rotisserie chicken in instant pot. I don’t buy the store bought ones anymore. I also double pie crusted mine because when I first took it out of the oven, the pan was slipping off me and I spilled some of it!!!! Used the other pie crust in pack and baked again. Saved the dish!!! Everyone said it was delicious!!!! I think a tip I would add is to put the cast iron pan on top of a sheet pan so it’s easy to take it out of the oven.

Yes, it is time for winter food, and your chicken pot pie looks wonderful. I really like the frozen pie shell hack. I, too, am a big fan of Costco's rotisserie chickens, but Costco takes easy meal prep to a whole different level with their chilled, hand-pulled rotisserie chicken breast meat. 3 lbs. of convenience: no skin, no bones, in nice large chunks. Since there is no skin, I haven't noticed any saltiness, either. They freeze well, too, in case you find them on sale!

I totally understand the salt problem ... I love Better Than Bouillon myself, but if you don’t get the low sodium, you can end up with some salty tasting food! I will try this recipe, Flo! Looks really good! Nice idea with just adding the top crust. Store bought pot pies are completely loaded with sodium.....even if this was a little salty its probably WAY better than the pre-made.

Looks yummy. I'll have to try with rotisserie chicken. I've made chicken pot pies before in my Ninja Foodi, so that I could brown the crust without removing from pot....but your method in the cast iron skillet is a great idea as well. I had to cut an X in the middle of the crust to keep from blowing a hole in the crust. Thanks again for the recipe and video.

The chicken pot pie is looking great and Dude must have enjoyed it and the kids too. The salt is what I would leave out as it was what made the dish saltier since the other seasoning already had plenty of salt in it.

I’ve also used Costco’s rotisserie chicken to make chicken pot pie. I don’t add any salt until done if needed. I think the extra salt comes from the better than bouillon.

Great recipe. You could turn the oven on broil and put the pot pie in for a minute or so, if you want to brown the crust .

It's really odd, the level of saltiness in store bought Rotisserie Chickens. I've had some that were almost inedible, and a really pricy one that was Perfect in all ways. The one at my local store is salty-but-not-too, and I've learned to adjust recipes accordingly. It's never fun to be taken by surprise, but I'm sure you worked around the saltiness, oh yes! And WOOT for the print version of the new cookbook!!

That looks amazing! Because my apartment has a glass top stove, I cannot use cast iron. But instantly thought of using this filling in my mini pie maker! And I’ll be using my left over thanksgiving turkey to do it! Just a question. Did I miss a video of yours that talked about brine? I’m looking to brine my turkey for Thursday. Thanks, Jackie! Since I started using sous vide to make turkey, I haven’t used brine in years. I think the last time I brined a turkey, I used Emeril’s recipe and I had to fill a cooler to fit the huge bird into. It was tasty but a lot of work! (That, apparently, I can no longer be bothered with. 😉)

I have used an iron skillet on my daughter's glass top stove. I am just very careful to not put it down hard or slide it. No problems so far. You could also use a stainless, oven proof skillet.

I absolutely love the quick and easy aspect of this recipe! It's been quite awhile since I've made a chicken pot pie, and I was thinking only yesterday that it was time to make another. I'm so glad this video popped up in my feed today. While I could go get a rotisserie chicken, I happen to have about 25 pints of chicken breast in my pantry that I canned last summer. Hey Flo, I I think you are correct in the assessment that the bouillon was the culprit and probably using only a dash of salt. What if you had added some butter to the crust top? The potatoes would be a nice addition. Also where is the line of apparel stating "I can't be bothered" lol Great shortcut.

I tried to order your new cookbook, but when I go through your link, I don't get the paperback option, only the Kindle version. If I go straight into Amazon and search under your name, I get the paperback option. I know if I purchase through your store it helps you, so I held off ordering. I will try again tomorrow and see if it changes. It does say to check out formats or editions; however, I still only get the Kindle option.
