I am cooking this now as I watch your video. I prepped my chicken last night and added other ingredients that you did. I too, make my own sofrito. It is hard to get some ingredients, as we live in Montana, but I am able to order some from local store. My husband is Puerto Rican and I am Native, we met in the military. I love his food and have been cooking it since we have been married 36 years. I make pasteles, Mofongo, and all kinds of other dishes. Our 5 kids grew up on it. Thank you for sharing your recipe. Nice flavor And poaching the Chicken before shredding it gave it such a nice texture. To finish, I took some sour cream added fresh lime juice and a little minced cilantro for dipping sauce... Put them over the top!

I have two sets of friends from Puerto rico that made me some, but they both call it pona deja. One puts potato’s in hers but the other one doesn’t. I like them both ways and will be using your recipe to make some.

Hi Linda, I just wanted to share with you that I made this recipe Sunday and this filling was absolutely delicious. I baked my empanadas instead of frying them and it did not dry the filling out in any way. Thanks for sharing and I hope you share more recipes.

You can use a paddle attachment in a mixer to shred the chicken. Much easier. Thank you for this.

I never made theses, but I bouggt Empondotes from a lady that sells them at my market and made a batch of yours separated and people liked ys better. I usually get 2 of the 10 disk pack. So I do 20 and if there's left over meat I freeze and save. The leftover meat is great from a sandwich to add to soup.
