Colours are defined by wavelengths. The colour with the highest wavelength is infra-red. The colour with the lowest wavelength is ultra-violet. The mantis shrimp can see from infra-red to ultra-violet so mantis shimps can see more colours than humans but they don't 15 colours. Also, there can never be "endless" amounts of colours as wavelength simple can't increase forever-it would be like things moving much faster than the speed of light.
