Sichuan Spicy Poached Beef
Ingredients:
- 500g thinly sliced beef
- Salt
- Ground white pepper
- Oyster sauce
- Dark soy sauce
- 1 egg white
- Cornstarch
- Cooking oil
- Dried chili
- Sichuan peppercorns
- Green onions
- Ginger
- Garlic
- 1 tbsp broad beans chili sauce
- 1 chunk spicy hot pot soup base
- Soy sauce
- Vegetables of your choice (e.g., napa cabbage, spinach, bean sprouts)
Instructions:
1. 🥩 *Marinate the Beef:*
- Combine the thinly sliced beef with salt, ground white pepper, oyster sauce, dark soy sauce, egg white, and cornstarch. Mix well. Add oil, mix again, and marinate for 20 minutes.
2. 🌶️ *Prepare the Spices:*
- In a pan over medium heat, add some cooking oil, then add dried chili and Sichuan peppercorns. Sauté until their color changes. Remove and set aside. Once cooled, chop into small pieces.
3. 🥬 *Blanch the Vegetables:*
- Blanch or cook the vegetables of your choice.
4. 🍲 *Prepare the Broth:*
- In a pot over medium-high heat, add cooking oil, then add green onions, ginger, and garlic. Add 1 tbsp broad beans chili sauce and 1 chunk of spicy hot pot soup base. Sauté until fragrant. Add hot water and bring to a boil, then add soy sauce. Remove and drain any solid spices or chunks from the broth. Add the marinated beef and cook for about a minute.
5. 🍛 *Assemble the Dish:*
- In a bowl, add the cooked vegetables. Top with the poached beef and some broth. Add the chopped dried chili and Sichuan peppercorns on top, along with minced garlic and green onions. Pour hot oil over the top.
