Ingredients :
250 g ground almonds (2 cups + ½ cup)
80 g of icing sugar (½ cup + 1 tbsp)
2 egg whites
Zest of 1 lemon
1 - Powdered almonds can be replaced by almond flour.
2 - You cannot use egg yolks in this recipe (which would no longer be the same at all). Save the egg yolks for a sauce or for your soup.
3 - My egg whites are at room temperature.
4 - You can make a citrus cake, adding the zest of 1 orange.
5 - My lemon is organic and washed.
6 - I do not add the lemon juice because otherwise the dough would be too liquid.
7 - The icing sugar can be replaced with a sugar substitute - but the texture will change (be careful, the dosage will have to be reduced depending on the sweetener used). For example, if you use Stevia. If you use Erythritol you can use the same quantities as icing sugar.
8 - You can use any size cake pan you want. Mine was about 18 cm.
9 - My oven is preheated before cooking.
10 - You can stuff the cake by dividing the dough by 2, with pistachio butter, it's a pure delight!
11 - I divided the quantity of sugar by 2 (compared to the traditional recipe).
12 - This cake will keep for several days in an iron box.
