A twist on the typical pasta dish, this Out Of The Blue Signature is a hearty and flavourful lentil-based pasta, brimming with nutritious ingredients and offset by Chef Rajesh’s signature spice mix and touch of red wine for added decadence, this is European dining with a new edge.
Ingredients:
1 kg lentils
50 gm each of chopped carrot, celery, onion, garlic, leeks
2 bay leaves
25 gm chilly flakes
25 ml red wine
5 gm basil
Salt and pepper (to taste)
10 gm thyme
Olive oil
Method:
In a pan, heat oil and add all the chopped vegetables.
Add tomato sauce, vegetable stock and boiled lentil.
Add salt, pepper, basil and thyme.
Add boiled pasta, vegetable stock and mix well.
Add butter and basil. Cook for 4-5 minutes.
Garnish with parsley. Serve hot.
