All tempes are made of soy beans and molds (Mycelium spore to be exact) as long as the mold not in green or yellow color it is safe to eat, the mold in the video is growing all over the places because it is put in more loose container than normal tempe.

If you visit Indonesia, you must go to Cirebon City, West Java, especially Ciledug District, East Cireon. There you will find interesting things from entertainment. The food is really good.

it's kinda funny when you said the tempe looks moldy.. tempeh is basically a moldy soy beans. as long as the color doesn't turn yellow-ish, it should be fine. the one they sell has a different soy bean-starter(mycellium) ratio, so, the white part looks more fluffy coz there's less soybeans and more room for the white part to grow, hence the moldy look ... have a nice trip! :D

Javanese people make tempe in many various creation. Tempe bacem is sweet and it can be eat with rice. So as Jangan Tempe Kering (dry and chilly tempe food). And you can also eat kripik tempe (dry tempe crackers)

Central Java and East Java is more likely and similiar in culture food and language. The place that you visit in this video and Borobudur Temple is on Magelang City, And it is true that Magelang is the center of Java Island , you can measure it ini google maps if you want too, the right coordinats is on the Gunung Tidar (Mount Tidar) as well known Paku Pulau Jawa (The Nail of Java Island) in the Magelang city, Our anchestor already know how to coordinates that thaousand years ago, now you should go the the West Java to complete your missions traveling through Java, West Java has different culture, language and food even they are in same island, have funnn !!!!
