Bai Hao Yin Zhen is my favorite tea for my two hour Sunday tea meditation. The effects must be experienced, and it keeps giving more infusions!

When brewed it, it give a very pale, champagne-coloured liquor that has a very light, soft, sweet, velvety flavour.

One other question regarding white tea, while I’m here, if you don’t mind: when a white tea is aged, whether it’s an all bud varietal like Silver Needle or a bud and leaf varietal like Bai Mu Dan, or even a more leaf heavy one like Shou Mei, does the aging consist of any fermentation “proper” at all? Like do any of the microbial organisms that develop the tea in Puerh also activate in aged white tea, or is all of the aging in white tea through oxidation, such as the aging in oolong tea, if I’m even correct that oolong aging is through oxidation, which I assumed because oolong is kept airtight generally when aged, while Puerh is left so that air can circulate and promote the microbial fermentation slowly over time. This question is very important to me, and I haven’t had anyone who’s able to answer it, so please, whatever you know would be greatly appreciated. I have to say, I’m quite enjoying your videos, and feel privileged to be a part of the true tea head community. Congratulations on your impending fatherhood, all the best wishes!

Don, is the difference in size of the buds possibly have to do with Yunnan having mostly Assamica varietal tea plants, so are the silver needle buds from Yunnan possibly Assamica, while the buds from Fuding are Sinensis? I have no knowledge of which tea plants grow in Guangxi, but I was always under the impression that the only Assamica plants in China were in Yunnan, please let me know what you think about this, and if you know anything about Assamica outside of Yunnan, other than India of course!

The best of the whole box: '09 Fuding Yin zhen!!... Guangxi wet leaf smells like butter but has no taste, same as Yunnan, Yunnan doesn't even has a smell. Heirloom Silver needle (more expensive than Jin Jun Mai) was my greatest disappointment !! Almost no smell when wet and tasted like lawn grass!!. '09 Fuding Yin Zhen tasted and smelled really nice....

My girlfriend had the same reaction to Guangxi. It's a very light note, and she prefers strong black teas. People like me LOVE the Guangxi white tea for its floral beauty. It tasted exactly like honeysuckle for me, but I enjoy lighter teas
