A tip for the fish collection, if you use the fishing basket from island living and place it in the water where there are fish. Make sure to bait it before leaving it alone. You'd probably have to stay on the lot for a couple of in game hours. Though, you can collect a large amount of fish at once.

You need to change the aspiration to Outdoor enthusiast when visiting Granite Falls and you'll need to identify the plants during for milestones in that aspiration.
