In this video I am out in the woods to do a bit of campfire cooking in my cast iron dutch oven and it is seafood chowder on the menu. I picked a very wet day for this one, but luckily I had a tarp to keep me, the camera and the fire dry(ish).
I hope you enjoy the video,

Chowder Recipe
1 onion, chopped
1 red chilli, chopped
2 potatoes, chopped
1 can creamed corn
1 stock cube/pot
500ml water
2 tbs milk
Oil
2 smoked haddock fillets, chunked
Mussels, prawns, clams or whatever seafood you like
Salt and pepper
Coriander, chopped
Fry the onion gently to soften, then add the chilli and and cook for a further few minutes.
Add the potatoes, stock and water and bring to a gentle boil - simmer for about 10 minutes.
Add the creamed corn and season with salt and pepper.
Add the fish and any seafood you wish - simmer for about 5 minutes until the fish is cooked through.
Garnish with coriander and devour!

I love your attitude to anything that comes your way. This time the rain, ok it’s only rain, but it would be so easy to complain or dial down the original plan. But you don’t, you just accept it and carry on. When you were last in Norway with Andy, you both went through some rough days n conditions. You not only lifted yourself but you were a rock to Andy. That’s true grit. I know like many of us, you’ve struggled with your mental health. What a strong person you must be to have dug so deep to turn your life around. It may never be fully cured, but accepting things for what they are, is definitely the way forward. Pat yourself on the back Simon. I love the escape watching your content. 🫡

Many people go camping , but not many have the ability to go with the flow & adjust to whatever life throws at you , while camping. A lot of people I know could never be that flexible, they'd just rant & rave & probably never do it again. It's all about the attitude & Simon's definitely got it right

Dozens of shifts in camera angle, in the rain, plus a ridiculous number of kilos carried into the woods, just to help us enjoy what you had to endure. Respect! I would never do this, even if I had a permission in a wood as lovely as that, but I get it. You are mad, but in the right way. Ha!

I do love smoked haddock in a seafood chowder. Even 'hard core' Bushwhackers could bring the ingredients out for the first night! I also favor Cilantro as the last-minute addition of a green herb.

Love that you don’t care that it is raining, that you trek out into the woods to cook a hearty and sumptuous chowder over an open fire, using firewood you processed on site, demonstrating that you are a good steward of the land and do it all with your usual cinematic flair! You English Men.... No garlic?... Loved it. We should be about the same age, nice to see someone with the same energy in the outdoors, even when it's a bit rough... Something worm and comforting in a rainy day outside like that is always great. And though i never had chowder, as soon as i get off my diet I'm goin to make me some... Meanwhile it's baked bread and some soup on tomorrow's campfire. .. thank you for this very nice video!

I recognized the label on the can of "Stokely's" creamed corn. The Stokely Brothers plant was founded in 1898 here in East Tennessee, Newport Tennessee to be exact. They did have a factory in Indianapolis Indiana that began earlier than the one in Tennessee.Guess we take the availability for granted living here in East Tennessee.

Have you tried hot smoking fish, it's really simple and you only need these small trangia burners, I have used these metal boxes that look like shoeboxes with a metal grid inside. Just season it with a 50:50 salt:suger for one hour (dry salting), remove the salt-suger before it goes in, ready in 20 minutes. Does not matter if it's raining ☺️

Andy was curious about a cardboard tent... the amount of rain he was testing it at was a bit much, it was probably designed for dryer climates like African refugee camps where Cook-It cookers were designed to be used... it was an interesting use of technology designed for homeless people in a different climate... the tents used in the Seattle area are rumored to be often stolen from sporting goods stores in the illegal homeless camps... not sure who is providing tents in the legal ones. Some places cardboard might work, but in many they wouldn't... Andy was sharing his curiosity on the topic. I try to learn from both of them. I also like to see the way solar cooking is being developed in Haiti to help save forests and reduce the use of charcoal that... a person on a Facebook solar cooking group is from/in Haiti and regularly shares his pictures, form people getting excited about his demonstrations... the helping people live better by a person who is applying a useful technology and is in the culture he is helping. Andy was curious, that was good.
