SIMPLE AMALFI COAST LIFE | FORAGING FOR DINNER! | The Positano Diaries EP 98

We decided to make sandwiches and go for a walk in the mountains but then it all changed when we bumped into our friend Fabrizio. He was out hunting for asparagus so we joined in. Before we started he took us to a beautiful viewpoint that looked down on Positano.
Asparagus grow wild in the hills all along the Amalfi Coast, they are ready to pick in mid March and are quite bitter compared to the fat mild asparagus found in supermarkets.

Cauliflower in batter: chop the cauliflower into chunks and boil for about 10 minutes until just tender. Mix a batter with 200g flour, 1 egg and 150-200ml fizzy water. Dip the florets into the batter and fry in vegetable oil until lightly golden. Sprinkle with salt to taste and enjoy!

OH WHAT A FEELING!!! I have seen all the comments that already speak my own thoughts, such as the word "Breathtaking" and "stunning" all very true, because more than once I have caught myself NOT breathing! I am crazy about foraging for anything wild that is edible! When you mentioned the asparagus being a bit bitter I was thinking YES and no wonder it is so good for us.. especially Kidneys and bladder... really all of the Urinary tract! Bitters have long been used for cleansing and healing... So magical that you can find these items in the WILD!! Love every video you have made dear Nicki!!

Oh my goodness, when you filmed the stairway to (heaven?) no where, I literally said Holy Sh$t, that is crazy. So beautiful. We had planned to visit Italy this fall to celebrate our 40th wedding anniversary but, obviously those plans are on hold. I've never been there and it is a dream of mine. My grandparents immigrated to the US in the late 1920's so I have a strong Italian heritage. Thank you for another escape to your beautiful country!

I would have remained up on that cliff, because getting down.... I literally have nightmares at night with going up on mountains/hills, and not being able to get down because it's too steep. And i never went hiking on such places in real life. At least not in the recent 20 years. And i can't recall before that. I'm basically terrified of heights. :( That really narrow path with missing part? i'll never be on it. or i'd have a mental breakdown. Thanks for doing it for us.. i nearly fainted seeing some of the angles/heights/steepness... oh those stairs too.... Yeah... thanks, i'll just watch from the safety of my couch...

If you plant, just be aware that you will need to tend it for several years before it starts producing for you. Its fairly low maintenance as a plant, it just takes time to establish enough to produce

That hike was incredible and scary. I have been on many backpacking expeditions in the mountains of California that were pretty steep but that was definitely steeper. Like the wild harvesting of asparagus. Love Carlos 's drone shots. Thanks Nicki and Carlos!
