In a pinch, you can also buy shredded carrots at the store. They will be more expensive than buying whole carrots but if you really need them they are there.

This looks so quick, easy and healthy!! I've just bought a very cute teeny tiny rice cooker that cooks about 1cup rice max or enough for 4 portions as I thought it would make kimbap easy and quick - and this recipe is perfect to start down that path! *QUESTION* - could you cook extra carrots and turn that into a side dish a couple of nights later and what if anything extra would you do/add ........ more sesame seeds, sesame oil, soy sauce, gochujang paste.....????? I love your recipes - they don't scare me - I feel confident I can make it with your clear straightforward instructions. Cheers from Oz!!

Yes, cooking extra carrots to use as a side dish later is a great idea! If you want to use the carrots as a side dish, you can follow the carrot recipe I made today, or if you like it spicy, adding a bit of gochujang would be good too. Ah, I see!😓 When making kimbap, try using a smaller amount of rice and fillings. Also, try rolling it firmly, with a feeling of tightly winding it up. Give it a try with this approach next time....😊🙏
