SIMPLE CHICKEN CURRY RECIPE | QUICK & EASY CHICKEN CURRY RECIPE | CHICKEN CURRY FOR BEGINNERS

Simple Chicken Curry Recipe | Quick & Easy Chicken Curry Recipe | Chicken Curry Recipe for Beginners | Chicken Curry Recipe for Bachelors | Chicken Gravy | Indian Chicken Curry Recipe
Ingredients:
- Chicken, curry cut- 750 gms
- Onions, fine chopped- 3 medium
- Ginger garlic paste- 3 tsp
- Garam masala powder- 1/2 tsp (Link to our Garam Masala Recipe: • GARAM MASALA RECIPE | ... )
- Green cardamom- 4
- Cloves- 4
- Cinnamon- 4 sticks
For marination:
- Turmeric powder- 1/2 tsp
- Red Chilli Powder- 2 tsp
- Coriander powder- 2 tsp
- Cumin powder- 1/2 tsp
- Whisked curd- 200 gm
- Salt- to taste
Oil- 3 tbsp
Salt - 1 tsp or to taste
Preparation:
- Marinate the chicken pieces with the items indicated above. Mix & set aside for an hour.
- Chop the onions.
Process:
- Heat oil in a kadhai & add the whole garam masala (cloves, cardamom & cinnamon). Once it splutters, add the chopped onions.
- Fry on high to medium for around 10 mins till onions turn light brown.
- Add the ginger-garlic paste & fry for around 2 mins till raw smell is gone.
- Now add the marinated chicken & fry on high to medium for around 10 mins.
- Continue to “bhuno” on medium for another 10 mins till the chicken pieces are browned.
- Add garam masala powder, mix well & then add 1/2 cup of water.
- Mix, cover & cook on low for 10-15 mins till chicken is tender.
- Serve hot with roti or rice.

I consider myself a proficient home chef and I tried this recipe out of curiosity. Only modification I made was adding desi ghee after frying the marinated chicken for 10 minutes with onions. This is a simple and easy to do recipe with fantastic results. I did not end up with a lot of gravy but my measure of half a cup is probably different from the chef in question. Full marks for a really simple chicken curry packed with flavour. Low on market spices but high on taste.

@@SpiceEats - oh and quick question, after frying the chicken on a medium heat for 10 minutes you then say to "Bhuno" the meat for 10 minutes, is there anything you do differently to "bhuno" the chicken for this 10 minutes of cooking? I'm making it again this evening :)

Bhuno is like searing on high to medium heat...make sure the meat is browned and the masala too and oil separates. 😊

Turned out very tasty. The only drawback is that on following the recipe, my gravy reduced a lot so it wasn't exactly a curry like texture but a very thick gravy. Any suggestions for that? Will be really helpful

Got it marinating in the fridge as I text another half hour or so got oven on will put in a garlic baguette and meantime I’ll open a tin of Tennents from the fridge for a wee appetiser before I start cooking and make the rice up. Nothing beats a good Sir Andy Murray (Curry) and a couple of beers on a Friday night after work. I’ll update after I cook it and eat it. Cheers!
