Omg Kristina. I’ve made so many versions of cream cheese and they never came out just right. I tried your version with the pulp from macadamia nuts and cashews and it’s DELICIOUS. I think the macadamia nuts make a huge difference. Thank you so much! I can finally stop buying store bought vegan cream cheese. You are a life saver 🥰

a tip for each of the 2 directions dairy products can go: for the unfermented ones: use a sweet tasting nut or a(light)sweetener to get activate sweet tongue regions (like milk) for the fermented/savory ones: to have a similar profile of taste enhancing compounds add a bit of nori (for inosinate) a bit of shiitake (for guanylate) and nutrional yeast (for msg) to get that rich taste that aged dairy cheese has

Trying to make this Sorbet in my blender only creates a mixture of mixed berry juice or smoothie type nothing like ice cream/sorbet. what am I missing to do. Will get the Nama juicer when I can. otherwise I'm excited to make other recipes you have shared even though I am not vegan. I love this and enjoy it as well as vegetarian meals. slowly removing chicken and turkey from my diet as they more than often aches my stomach and make me feel bloated.

Oat milk, tigernut milk (tigernuts are actually tubers and not nuts despite the name). Also bananas make nice creamy milk.
