We made salsa one year that had 6 Serrano peppers, 6 jalapeño peppers, 1 habanero pepper, and a ghost pepper. It was amazing, had a great flavor with a little bit of heat up front then it hit you with the heat in the throat. It would make you sweat but you could not stop eating it because it was so good.

Mexican and TexMex cuisines are my absolute favorite! I put salsa on just about everything....Italian dishes, pizza and of course, Mexican food! I like it HOT. There is _always_ salsa in my fridge waiting for me to dig in with tortilla chips, Mexican rice, refrieds or anything else I think it will be good on. Thank you for these recipes! Gonna make some! 😋🤤

Habanero is my favorite pepper. A small hole-in-the wall in Lake Worth Florida called "Taco Lady" had the absolute best Mexican food outside of TX. She (Mama) made a fresh salsa that was all fresh (not cooked) habanero with a little onion, lime and some spices (sazon). I make my own now, no longer living in Florida. It's not quite as good, but it's close. Thank you Mama. Hope you're well.

My dad would combine all 3. My dad once made some that cured my head cold & cleared my sinuses. And all i had was a tiny bit on it. He used a lot of habaneros that & he ate all of it. I made some that was hot but I didn't use habaneros, I used jalapenos(fresh & dried) I called it the Devil's Chili. Also when my dad made his he put it on everything, salad, spaghetti, potatoes & eggs, everything.

I can’t wait to go and grab some habanero and make these salsas 😋 the spiciest salsa I’ve ever had was the green habanero salsa in Mexico. It was just crushed green habanero in small chunks and seasoned with a lot of fresh lime and salt. It was amazing!!

One of my favorites, I made a fermented ghost chili sauce - ghost chilies, salt, cider vinegar. I cooked it outside, had a yellow jacket dive bomb it, and it added its own flavor 🤣 I don't like hotter than ghost, but habanero is fantastic. Cayenne is one of my favorite all-around chilies, with ripe serrano and Fresno being high on my list.

Fresh always best👍, every summer I have to make large batches to bottle, learned a tiny tiny bit xanthan gum is perfect, holds them together, I've had many separate until xanthan gum, can't add too much, well can but be toothpaste lol. Made large batch ghost and scorpion peppers, garlic, onion.. did some with tomatilos, was too insane, took over year to give away and use lol.

This last autumn I received a bunch of Carolina Reapers, Ghosts, and Red Serranos. So I fermented up each separately adding Habaneros to the Ghosts and Reapers and garlic to the Serranos. Let them ferment for about two months. Then I made individual sauces out of each. I found the flavors of the first two to be a bit one dimensional and the serrano sauce lacking in heat. So I blended up a sauce out of 4 parts of the Reaper, 4 parts of the Ghost, and 2 parts of the Serrano sauces. That sauce is both amazing in flavor and as hot as any store bought Reaper sauce I've ever tried.
@thatpointinlife11 ай бұрын
I feel like Habanero (and Scotch Bonnet) is the best of the "hot" peppers. I love that sweet fruitiness you get up front, followed by the slow, building heat that takes you right to the edge of "I don't know if I can handle this", but then it shows you some mercy. Of course, a little Reaper every now and then is fun for the high it produces, but "enjoyable" is not exactly an adjective I'd use to describe it. 😅

I would consider myself a chilihead. I have dried Trinidad Scorpion and dried Carolina Reaper powder that I use from tome to time. But when it comes to simple, reliable everyday heat, nothing beats the good old Orange Habanero. It's a classic with a wonderful taste and to be honest, you don't **really** need more heat than that.

I few years ago, I grew my own peppers. I had habanero, Chocolate Bhutla, Yellow Scorpion, and tabasco peppers. I was making a salsa to test friends and coworkers, so I had at least 6 of each in the skillet with a few tomatoes, some onion and garlic, and a little oil. I was fine, but when my wife woke up on the other side of the house she started choking as soon as she got out of the room. That same day she ordered me a camp single burner and informed me that I would be cooking salsa outside from then on. 🤣. The salsa was good, but Very hot!

Interesting but of chemistry on the third salsa. Fat molecules can encapsulate capsaicin so you feel less heat but get all the flavor. That's why milk or even half and half helps cool the burn.

Amazing…Gooder…I am Going to try…going to store to buy supplies…trying to recreate my Grandmothers Taste from My boyhood! Grandmother was old school Spanish who passed in the 70’s but as a boy of the 60’s I remember she grilled on cast iron plate on stovetop & mashed in a molcajete and made a waterey salsa she called”chili”. As a Boy it was Hot! Never have I tasted that”chili” flavor except about 20 years ago went to a whole in the wall giant burrito shop & one time their “salsa was so different…Just Like My Grandmas…went to manager and asked who made the salsa …it was so great! The manager said they had an old Hispanic lady who came in once a month and she made “her” recipe batch of salsa… that lasted about 5 days…I said I needed the recipe…manager said…no recipe… she makes a batch by memory…won’t be back until next month…tried two other visits asking for her…no luck tracking down…the other salsa recipe at the burrito place tasted like boring salsa off the shelf from Walmart… My mother is now 84 and Never Learned recipe…never cared. No other family alive…tried dozens of off the shelf…no where close…gone to hundreds of authentic Mexican restaurants in my life…NONE even close… I Hope yours might be close?! P.s. I love watching you and your mom. You remind me of My Family as a Boy! Take Care!!!
