I know how to cook mackerel to make it easy and delicious. Now this fish will be even tastier for you! Let's make an incredibly tasty dish - it will be mackerel baked in the oven with lots of red onions. However, I will not bake in the oven at all, but in a Panasonic steam oven, thanks to which the fish will be incredibly tender. There are many ways to cook this fish in the oven: there is mackerel baked on a vegetable pillow, stuffed mackerel or mackerel baked in pieces with vegetables. I decided to bake the fish whole, putting it in a form with onions and covering with foil. So the aromas of onion with wine vinegar, garlic and mackerel itself combine and create an incredibly harmonious taste.

Preparation time: 15 minutes
Cooking time: 40 minutes
Ingredients:
3 mackerel
500 g of red onion (6-8 pcs.)
3 cloves of garlic
5 st. l. olive oil
6 st. l. wine vinegar (or 1-2 tablespoons of 9% table vinegar)
salt and pepper to taste
Step-by-step recipe for baked mackerel
Prepare all the ingredients for baking baked mackerel with vegetables. If you have frozen fish, defrost it first: transfer it from the freezer to the refrigerator 12 hours before cooking or put it in an airtight bag and in a container with cold water for about a few hours.
Peel 500 g of red onion and cut it into half rings. I chose red because it tastes sweeter than onion.
Heat a frying pan with 5 tbsp. l. olive oil and lay out the onions. Fry for 3 minutes on medium heat, stirring constantly. Onions should become soft, it is not necessary to fry it strongly. Then add 3 cloves of garlic and pour 6 tbsp. l. wine vinegar. If you do not have the culprit, add 1-2 tbsp. l. ordinary table vinegar 9%. Evaporate the wine vinegar, simmering the onion for about 2 more minutes.
Transfer the onion to a baking dish and place 3 mackerel on top with the bellies facing down so that all the flavors are better absorbed. Sprinkle with salt and pepper to taste.
Cover the baking dish with foil so that the aromas stay inside and the fish is more juicy.
Bake the fish for about 40 minutes at 190 degrees. I use my Panasonic steam oven and steam convection mode for this.
