Ah So tasted this cold dish lotus root in Beijing almost 30 years ago with Leslie Cheung. Ah So is spellbound by the taste and want to share with all of you.
Step 1
Wash, dry and zest orange and lemon, avoid white pith.
Step 2
Squeeze orange and lemon juice separately, add zest to orange juice.
Step 3
Wash lotus root with drinking water and dry. Use mandoline to slice, lay them flat to dry with paper towel.
Step 4
Place lotus root slice evenly in a large dish, pour orange juice over, taste and add lemon juice, refrigerate.
Step 5
Add bottled orange juice for extra sweetness, remove orange zest before serving, place lotus root neatly in a plate and pour orange juice over.
