Sauce for eggplant cold dish: fish sauce, light soy sauce, white vinegar, sugar and sesame oil, simple but pay attention to preparing this seasoning.

Step 1
Cut the calyx and end off eggplant, cut into 6cm rounds, half each piece in the middle, soak in water with small amount white vinegar.
Step 2
Prepare steamer, put eggplants inside after water boils and steam for 5 minutes.

Chop green onions, cilantro (stems only), Thai chili and garlic.
Step 4
Remove eggplants from steamer to cool, and place in refrigerator.
Step 5
Prepare sauce: fish sauce, light soy sauce, white vinegar, sugar and sesame oil, mix well and taste.
Step 6
Take eggplants from refrigerator, tear each piece into thin strips, put chopped green onions, cilantro, Thai chili, garlic on top, and pour the sauce over the dish and serve.
