Loved this! I grew up eating the whole animal and because of that, I understand the benefits of this. Although as a kid, some of my friends would make a face when I’d mention we had pigs feet and chick peas or calf’s brain, or ox tail, etc, regardless I still enjoyed each dish wholeheartedly :). Now a days with kids of my own, I cook in a similar way but instead of buying these cuts from my local supermarket or butcher, I order from locations that offer grass fed/grass finished products, something I can’t get locally unfortunately. I love making homemade beef and chicken bone broths using neck bones and bone marrow bones and chicken feet. We have beef heart with breakfast or slicked up on homemade pizza. SO GOOD! One thing I’ve never done is making pate with the liver or grinding up organ meats into my chopped meat. I am definitely going to try this next, thank you!

You are my kind of people. I just found you and now I don't feel so alone. I make bone broth from chicken feet and I use it for everything. I found Fed by the Farm and started getting my meat from them and yes there is a remarkable difference. I love your stove. It's so pretty.

Good eating for sure. I grew up in an old farm family, hunting,fishing, eating all an animal gifted us. So glad you are not afraid to show and tell people about the "rest" of the animal.

I need to thank you for your chicken for a week vid. Really was delicious and fed me nearly a week with soup,tacos & sandwich. I have tried many diets but meat is great for my body/health. Seeing Becky on Acres she is a machine for sure but not authentic like yourself. You can clearly see your not in it for money or being known. If you need support on days that are tough reach out to your community. The your community/comments are really nice people and showing up as you are is life. Your stew came out mouth-watering. I have lived as a Western here in SE Asia for 25 years. I greatly respect the fact that they use every part of the animal to cook food. Nothing is ever wasted. At some point, Western food culture alienated themselves to prepare all parts of the animal.

Thank you!! I agree with you! We spent a summer in Berlin and found a little farm to table restaurant that served osso buco and it was one of the best things I’ve ever eaten!

Thank you for this video. I grew up with women from the south who not only used pig feet, pig ears, chitlin's, oxtails, pig tails, neck bones and parts most people have never eaten like cow udder!

Great information! So many people don't have any idea of head to tail. question?? Have you done beef brains? I have no idea what that would be, but just curious.

We never have! At some point we’d love to process our own animals but we haven’t yet. There are certain cuts, including the head, that a butcher won’t give us.

Those marbled thick steaks look delicious. Your children must be Uber healthy. My doctor recommended the lower legs and hooves for collagen, ears too. I wish I could get the brain for the heavy cholesterol and for cognitive repair.

Yes! It’s kind of frustrating that there are certain cuts we can never get from the butcher but we use all we can!

That customer at the farmers market is strange for being disgusted. Oxtail can be incredibly expensive now in places unfortunately, but it's a common dinner for Caribbean descendants like myself. It used to be dirt cheap all over America. Many cultures eat oxtail and liver. In the West Indies, they used to even chew up chicken bones for the nutrients inside. Thank you for this video, I enjoyed seeing other ways to cook these parts and appreciation of the whole animal❤

Yes, I bet it's so good cooked traditionally the way other cultures do! So much being missed out on both flavor and nutrition when these cuts aren't appreciated!

Just listening to your intro to the video... go check traditional spanish food, from "callos" to "cap i pota", "higado encebollado", "carn del perol", "criadillas", deep fried sheep brain, "menuts de gallina", "llengua de bou", "rabo de toro", "osobucco".... just to mention a few of my childhood dishes both spanish, catalan and italian Edit: just to warn you, in some parts horse meat is included... rabbit too

@From Scratch Homestead: I’ve found a farm in my state that is about 1hr away from me. The profess to raise their livestock without hormones, antibiotics and all grass-fed, so I’m really very excited. When you’ve had your cow butchered, what cuts do you request? My hope is that I might buy 1/2 of a cow via CSA from this farm, so I’d very much appreciate your advice. Please not that I’m also on a nutrition-dense diet for medical reasons, so it seems we have much in common in that regard.

Hi! That's great! As far as cuts go, the big thing is that we make sure we ask for everything - organs, fat, anything and everything we can get. I tend not stray much from all the standard roasts, steaks, etc. Hope this helps and enjoy all of that meat!

I usually simmer beef tongue covered in water for a few hours then pull off the skin around in before slicing into smaller pieces. Hope this helps! Thanks for watching!!

Hello, Hispanic here. We slow cook the tounge just like a pot roast it shreds really well and is delicious this way. Hope this helps

We use it within a week but if I did want to store long term I'd pressure can or freeze. Thanks for watching!
