Simple Southern Italian S Cookies (e85)

Buon giorno a tutti! In this episode, Nonna Mia, la nonna di tutti (everybody's grandma), shows us how easy it is to bake up a batch of S cookies. Unsurprisingly, the cookie takes its name from its S shape. Italian S cookies are perfect for dunking into your morning coffee!
Nonna loves to use the traditional method of building a 'nest' with her flour, but you can of course use a bowl and mixer. She just prefers to work with her hands and appreciates the exercise that it brings.
You will need the following ingredients:
- 4 cups of flour and a bit more for dusting the board
- 4 eggs
- 1 cup of sugar
- 3/4 cup of olive oil
- 1/4 cup of milk
- 2 T of baking powder
- pinch of salt
- zest of a lemon
After blending in all the ingredients, on a dusted board, knead the dough until it is smooth. The consistency should be soft. Cover it and let it rest for 30 min.
Begin rolling snake-like ropes of dough and cut them to about 7 inches and then shape into an S. This recipe yields about 40 S's. Next press gently down, brush with egg wash and sprinkle with sugar.
Bake in a preheated over at 375F for 13-15 minutes on parchment paper. The cookies will appear golden in colour and the base will have gone golden brown. Allow to cool on a rack, pour yourself an espresso and enjoy!

Grazie cara. You know, I don't know. For decades, these S cookies have been made in Southern Italy. Grocery stores sell them - even in my small town in Ontario. I think because it was an easy shape, but I don't know. Such a good question. I would love for someone to tell me too! xx
