Ok, made this. Had to use green onions finely sliced here in the states. Turned out very delicious, had to keep my 70s eye stove on highest high to get temp in a stainless steel wok. Turned out great! Cheers

I always struggle with noodles sticking extremely fiercely to the bottom of my wok - I do try to keep it seasoned, it gets some oil rolled around while ridiculously hot beforehand, but I always end up with a mess of stuck noodles that I have to use some serious effort to remove afterwards. Any tips? Maybe I'm not letting them dry out enough after hydrating them? I always worry they'll stick together too much if I let them sit without oil. Did mention that while Cher mentioned extreme heat while cooking the noodles, uh, if I tried to use 'extreme heat' on my stove the noodles would burn instantly where as the video was pretty calm. I go super hot for the initial oil then have to back it off a bit for the noodles.
