Nearly all of my cooking skills I’ve learned over the years are from watching Jacques Pepin. I always cook my omelettes ( perfectly ) by watching and learning from his videos. Excellent!

@@clintwhatley7981 Did you know Jacques had a stroke when he hit the age of 80? He couldn't go to New York for the birthday celebration his friend had arranged for him with 80 birthday cakes. They Skyped from NY to his home.

I had the pleasure of meeting almost all the chefs, Ming Tsai, Bobby Flay, Mario Batali, Martin Yan, Emeril Lagasse, Rachel Ray, Giada De Laurentiis, Wolfgang Puck, Morimoto, Guy Fieri, Anthony Boudain, but I never met Jacques Pepin. I hope one day I can so lucky to cross paths with Jacques Pepin, that would be a great day for me.

@@fifermcgee5971 did you know that Jacques was in a terrible car accident in the 1970’s? No one believed he would make it, and the doctors operated as they had never seen so many injuries in one person at one time. His will to live and to create is what has kept him going. What a great teacher.

So many chefs are intense and stressed and bang. bang. bang! Jacques just calmly cruises through, so competent and relaxed, and just loving the process. He just epitomises the love of food and cooking, and that it doesn't have to be a stressful experience :)

Adam Poll, you said it perfectly, “just calmly cruises through...” I think that’s what makes him so very enjoyable. He’s such a master and not bang, bang, bang, but perfectly paced and fast enough. eh... i don't think you're giving ming enough credit there are certainly some cook show hosts who talk over Jacques and don't pay the respects they should be paying. a quick youtube search will show you some examples

I made the chicken livers, 10 yr old boy wouldn't touch it. Just pureed the whole thing and out came a really decent pate. It actually worked and held up well to all the fancy pate recipes out there.

Wow. I’ve Sean Jacques make soufflés in different ways. His apricot & pistachio soufflé, ham & broccoli rabe soufflé, & cheese soufflé. This chocolate one looks easy compared to other recipes that seem very fussy. I’m practicing my soufflé skills so they’ll always come out perfect.

Chicken livers fresh from the still ubiquitous neighborhood butchers, sauteed in butter with garlic, onion and thinly sliced apples, over rice-one of the easy cheap meals that often saved this art student from starving in Paris (for 2, for 10 francs, in 1987.) His methods, followed correctly, will make simple nutritious, but more importantly-mouthwateringly delicious food. You will find yourself demanding better quality in other aspects of your life, if you up your food game. (Affordable Macrobiotic and Vegan/Vegetarian groceries/Restaurants abound there, as well. Or did. Not sure if Whole Foods has bought France yet.)

Ming, Just FYI , I live in Brazil and Brazil is the largest exporter of poultry in the world. However, a large percentage is exported to Muslim countries and they do not eat anything from the inside of the chicken, we have chicken livers, hearts, and gizzards coming out of our ears. We can buy a kilo of chicken hearts for a couple of dollars. Brazilians put them on a spit and barbecue them all the time. You can always find them as an appetizer in a Brazilian churrascaria. lillylasam12 You just saw him make them! Jacques doesn’t do recipes and quantities. It’s a splash of this..... a touch of that. THAT’s why he’s a culinary genius! My mother was half French. She cooked the same way. Even when baking a cake, she did it all by skill and experience. She didn’t even OWN a set of scales or measuring cups.... You don’t need a recipe. Just do it the Jacques way. It might not turn out exactly the same. But that’s kind of the whole POINT of real cooking. I’m a trained chef, and I’m constantly changing the way I make my favourite classic dishes. I’ve been making chocolate soufflé like this for forty years, exactly like this..... BUT I experiment. Try adding some grated nutmeg on the top. Or add a drop or two of oil of cloves to the mixture.
