Cream from a cow is naturally yellow from the beta caratine level in it, that's why butter and cheese are a yellow hue and can be darker or lighter depending on the cow breed and their diet. Red velvet cake is known for being red for the type of Swedish chocolate that is used. Thank you for coming to my TED cliff notes

I make butter every American Thanksgiving as a super unnecessary family joke. You mix cream far passed the point of whipped cream, when the cream separates into butter and buttermilk. You use a cheese cloth to squeeze out all the buttermilk and then you have butter. It totally naturally has a slight yellow tint when I make it. 🤣

And also cheese is dyed orange because good cheese with higher fat content has a natural yellowish tinge and some farms decided to dye their cream/milk in order to fake a higher quality appearance than is physically possible. It can be done with natural/plant based dyes but the cheaper cheeses now use cheaper dyes. The orange/red used to be annatto, and from fancy farms they still use that.

For most of my life I thought it was common knowledge that you make butter by whipping cream for a long time, like that was literally one of the first kitchen-type things I learned as a child ("don't whip the cream too long, it'll turn to butter!"), but recently I've realized that this is in fact not common knowledge 😅

I think it's common to use red beans for candies in asian culture (like as the filler in a mocchi, for exemple). I really like it, but don't know if you could replicate it with black beans

I make my own butter :) the color of the butter comes from the fat having been separated from the buttermilk. So as you keep whipping/churning the cream, it separates the fats from the liquid. Then you're left with globs of butter in a liquid, called Buttermilk! Then you strain out the blobs and form it by hand, in ice cold water, into a ball or log. It's great! Tastes delicious. It's surprisingly easy. You can get fancy butter churns but I just use my blender or a hand mixer haha. So essentially the yellow color is the color of the fat which is present in the whipping cream, but because whipping cream and milk in general is mostly water, by making butter your separating the water out and so the yellow of the fats become more visible

Also the more grass that the cow eats the more yellow the butter will be because of the beta-carotene content. And it can also change seasonally, butter made from milk produced in the winter is less likely to have as yellow of a color because the cows are unlikely to be feeding on fresh grass, whereas in the summer they likely have more access to that. That's why you see grass-fed fancy butter is going to be more yellow than non grass-fed.

I study food science at Uni and i can confirm this^^ and a food that is dyed to look more appetizing is fish for example, like salmon...usually it comes from fish eating little crabs (same goes for flamingos btw) but in captivity they use dye instead bc it would be too expensive to feed them the crabs

For the record, saltines are a specific kind of cracker! Stereotypically something you eat when your nauseous/having trouble keeping food down. They’re very boring crackers but also my favorite 😂

This episode is definitely in my top faves, I laughed so much. Their conversations never feel forced or rehearsed, that's why this podcast has been such a treat. Really wish they had gotten to have more guests on like they originally wanted to, maybe Ben would've wanted to continue it longer.

During this podcast I had a pack of saltine crackers next to me and I was eating homemade french fries. So I was laughing but also wanting to know what kind of potatoes the potato cake used. Not because I want to make it but because potatoes are not all the same. I have favorites and sorry russet but you are dead last. Way too starchy and not enough flavor 😅

making your own homemade plant milks can be fun, but remember the ones from the store are fortified with vitamins and CALCIUM! i love oat milk, but if i made it at home it would not meet my nutritional needs and probably won't meet yours either, especially if you're replacing regular dairy.

Yesssss!! This is a huge one! We fortify our milk in Canada with vitamin d because it’s impossible to get it from other foods, and so much of our year is dark or too cold to go outside!

17:47 with all that oat milk it would be cool to see a vegan bake on the baking stream. I’ve been vegan for about 5 years and bake a ton and it’s not much different. Plant milk instead of cow and applesauce or a flax egg (ground flaxseed + water) instead of chicken eggs. Loving It Vegan has some of my favorite recipes, especially the double chocolate chip muffins :)

Cristine: ”Are you ok?” Ben: “No.” I feel you, Ben 😂 Also, you should definitely try the bean brownies! I have a feeling that it would taste good, sneaking weird veggies into sponge cakes and pies etc sometimes makes it delicous and you would never tell that the cake has zucchini/beetroot/eggplant in it. It usually helps to moisten the cake and to make it super soft, fluffy and dreamy.

I love zucchini bread though and I've had to convince some people that it's not weird. Now they all actually love it. Have you seen the weird avocado chocolate desserts? I got this from a blog called The Banana Diaries for oat milk: Ingredients 1 cup rolled oats, sprouted or regular (make sure they’re GF certified if needed) 6 cups chilled filtered water 1 tsp vanilla extract Optional: 1 date, 1 tsp cinnamon Instructions In a large blender, add all ingredients to the base. Blend on high for only 30-40 seconds. Any longer than that will result in slimy oat milk. Set the blender aside, and drape a cheesecloth or nut bag over a large bowl. Pour the oat milk over the cheesecloth to separate the oats from the water. Do not squeeze the water out of the cheesecloth or nut bag, as this will also result in slimy oat milk. Let the water drip, then when it’s basically all out, discard or save the oats for another recipe.

I had some red bean cookies when I went to Korea and they were kinda like this balls of red bean paste coated in pancake batter and fried in this waffle machine looking thing they were AMAZING I tried to make them at home but I didn’t know that those were different beans so I just used regular black beans. They were not as good for sure but surprisingly they were still totally okay! Like you wouldn’t throw them out or anything. I only realized I had a wrong bean because of the cooking time. I had to cook the beans way longer and they were soaked. Anyway that was 10+ years ago and I was 22 😂 so I give myself a pat on the back for making those anyway lol

The whipping of the cream actually changes the way the molecules are ordered. It's protein based so basically the molecules get more and more clumped together. This changes the chemical structure and eventually this change causes the color to become more yellow than white. This is what I learned in biochemistry once.

I've had black bean brownies before and you honestly can't taste it at all, but the texture is softer than regular brownies. Nothing gross, though, you should give it a try!

Get some unpasteurized whole milk, boil it and let it stand in the fridge for some time. you ll see the cream on top. It will have a slight yellow tinge and give a denser butter if you whip it. The water separates out and that is one type of buttermilk. Whipping cream you get is just a purified and stabilized version of that.

About the butter being yellow, In India, two types of milk are widely used, cow milk & buffalo milk. Cow milk is better quality and is slightly yellow naturally, hence butter made from cow milk is naturally yellow and it gets darker because butter is dense than milk. We also make butter using buffalo milk and that butter is pure white. Extra information, when you heat and simmer a lot of butter for a long time, it turns into ghee/clarified butter.

Actually in Asia there are a lot of desserts with not black but red beans, such as ice cream, or moon cakes, which have red been paste inside.

Some of my favorite pastries have bean paste in them. I tried one they labeled green bean once, and I tried to ask what kind of bean, but the cashier just said green bean. Maybe they meant mung? Surely they didn't mean string beans. Anyway I like the white paste best.

Black beans brownies are really good! They are mostly for texture, the flavor of the beans is not really that intense, so it makes a good protein source for the treat 💜

Its always fun to hear you talk about dairy products haha. I work in a dairy firm and know how the stuff is made. Butter is always churned, its the Process needed to make butter. The cream gets beaten, the fat clumps togheter and buttermilk is beaten out. (That's how buttermilk is "made", it's just a byproduct) the yellow color is not colored, it's the natural color of the milk fat, so no worries about that haha. And yes, cheese can be colored sometimes, it's a color out if the color from a carot. And oat milk is a more complex process than just mixing up some oat flour and water haha. Well it's kind of that, just with way more steps to it

There are many bean based desserts in Asian cultures! I grew up on red bean soup (a dessert dish) and tang yuan, a sort of sweet gelatinous ball with various fillings including red beans, etc

Sodas and beer are great for meat marinades. They help make the meat tender and give it flavor. My friends mom makes Dr Pepper ribs and they are so good!!

there's no yellow added to butter it is that color. You can make it in a mason jar if you want or you could do it in a barrel but usually it's just made in big stainless steel tubs in a factory. The color (just like regular milk that hasn't been pasteurized) comes from with the cows have eaten. Certain foods will make it more yellow just like certain foods can make raw milk have a distinct smell or taste to them as well.
