As a Filipino chef, I can’t wait to share one of my favorite recipes: Kare-Kare. It’s a dish that many Filipinos love and often request, so let’s make one! This rich and flavorful stew is perfect for impressing your loved ones and showcasing the unique tastes of Filipino cuisine.
Ingredients:
1 ½ kg. Mix of beef hock, skin, mask & tail, boiled
1 kg. Oxtripe
1 cup Water
½ cup Annatto seeds
Oil, for sauteing
1 cup White onion, minced
5 cloves Garlic, minced
1 cup Glutinous rice, toasted and grind
2 cups Peanuts, roasted and grind
8 cups Beef stock
(Annatto water)
Salt & fish sauce, to taste
1 pc. Banana blossom, sliced
3 pcs. Eggplant, sliced
1 bunch String beans, sliced
2 bunch Pechay
Serve with bagoong

Out of all the Kare-kare na nakain ko ganitong recipe talaga yung hinahanap ko, kare-kareng matanda kung tawagin nila. Nanay lang ng barkada ko (na Kapampangan) ang kilala kong nakakagawa ng ganito. Maraming salamat sa recipe, Chef!

This is how my father used to cook kare kare and this is also how I make it today. Not as often 😅 but when I have the craving for it. My daddy used to make it for Sunday lunch, at least twice a month!

Chef Tatung, this is the same procedure my nanay used to do when she cooks karekare. I am now 65 years old and I remember helping my nanay by grinding the peanuts and toasted rice using mortar and pestle. ( dikdikan) 🙂

I was born and raised in Capiz but now live in Manila, and this is how my parents used to prepare Kare-Kare. My father died in 2007 and my mother in 2020, and I never had Kare-Kare after her death. Thank you, chef. I'll try to make Kare-Kare before the year ends. It truly evokes memories. ❤️❤️❤️

Yes, Chef! Ako din, I prefer to use ground peanuts. If at all, I use the non-sweet peanut butter. Of course, tripe, beef maskara and ox tail!

Thanks for sharing this chef! Na inspire ako kase paborito kong dish ito. At para sa akin, I agree, mas prefer ko yung ganitong lasa na traditional, kesa sa mga resto. Tamang tama, this weekend bday ng mama ko, I'll give it a shot and cook this for her.

That’s how we do it in Pampanga. The traditional way without even the grinder. I used to pound the peanuts after removing the skin.

As a Bicolano, we usually add coconut to saucy dishes for a bit of experiment, after all cooking is also a form of art. But, we don't intend to to put it in all the dishes only to some for as long as it will not ruin the dish itself. We are not that extreme. 😂🤘. More Power Chef...

chef, another tip..may nabibiling glutinous rice powder sa market. un ang turo naman sa kin ng mother ko. binubusa rin xa ang kaibahan lang is powdered na sya.. kaya no need ng igiling... same taste and texture kapag nabusa na.. try nyo rin po. tnx

Thank you, Chef. That's how we cook our kare-kare, too, even up to now, We never use peanut butter so it's never sweet. We never cook the veggies separately. Sometimes they would add (if avaialble) sigarilyas and what the ilocanos call parda.

Ginagawa ko, yung rice flour ang binubusa ko, no need na igrind pa at imported peanut butter ginagamit ko para mas lasang peanut at hindi matamis. At hinahaluan ko nggrinded binusang mani. Ako mismo nagbubusa ng mani at inaalisan ng balok. Sa palengke ko pinagagrind yung mani.
