If you make the tomato sauce for pasta bolognese from scratch like her, it's anything *but* a one trick pony. Making tomato sauce like that is a LOT of work, and developing those deliciously sweet, deep and concentrated garlic infused tomato flavors takes a fair amount of time. Usually, when I make bolognese sauce from scratch with San Marzano canned peeled whole tomatoes it takes at least 2 to 3 hours of slow simmering to develop the flavor profile I want 😊😀 Not to mention the fact that she served them a vegan version of pasta bolognese; and they didn't notice! That means she made one hell of a bolognese. The flavor profile most people expect when eating pasta bolognese is very, very difficult to nail when one cannot use the delicious caramelized savoury flavors that develop when frying the traditionally required ground beef. My hat's off to you, Alix! 👍👌👏👨‍🍳 Well done.
