I’m finding there is a lot of movement or flexibility in the book I wasn’t expecting. My stitched seem tight but how much rigidity should the final book have?

Yes, I have had the same issue, especially when I was just learning. A few things have helped me remove some of that movement: practice, tightening the stitches/thread at every step, and switching to multi-needle coptic binding. There's always going to be some flexibility in this binding, which is a good thing for having it open flat, but the more you practice and work with it, the more you can lessen how loose the binding seems.
